Italian cuisine is aromatic herbs, exquisite sauces and a riot of bright colors on the plate. So, as you may have guessed, today’s recipe is a dish of Italian cuisine, although probably the inhabitants of the Tuscany region will not agree with that statement. Why?
Tuscany is known for its landscapes, traditions, history, cultural heritage and its influence on elitist culture. Tuscany is considered the cradle of the renaissance. Many artists and scientists hail from this region, including Leonardo da Vinci, Dante Alighieri, Galileo Galilei, and Amerigo Vespucci. The region is home to many cultural attractions, including the Uffizi Gallery and Palazzo Pitti. Tuscany is also known for its wines. Wine varieties such as Chianti, Vino Nobile di Montepulciano, Morellino di Scansano, Brunello di Montalcino are produced here. The region has great linguistic and cultural differences from the rest of Italy, so it is sometimes considered a “nation within a nation”.
Therefore, this dish should probably be called Tuscan.

Beat the egg in a shallow bowl. In a separate shallow bowl, whisk together the flour, salt, pepper, oregano, thyme, paprika, and garlic salt.
Dip the chicken breasts in the egg and then in the flour mixture.
Fry in a pan with oil on both sides until golden, then place in the oven to bake for 10 minutes while you prepare the sauce.
Soften the chopped onion in a pan with a little oil, then add the garlic, oregano, paprika, sundries tomatoes, red pepper and tomato purée. Cook for 2 minutes, then add the white wine.
Add chicken broth, salt, and pepper. Bring to the boil, then cook for 5 minutes, then stir in the cream and Parmesan. Add spinach and allow to wilt.
Add the baked chicken, cook for a few more minutes and serve with a sprinkling of fresh parsley.

Ingredients
For the chicken
- Chicken breasts - 4 pcs.
- Egg - 1 pc. big
- Flour - 3 tbsp. l.
- Salt - ¼ tsp.
- Freshly ground black pepper - ½ tsp.
- Dried oregano - ½ tsp.
- Dried thyme - ½ tsp.
- Paprika - ½ tsp.
- Garlic salt - ¼ tsp.
- Olive oil - 3 tbsp. l.
For the sauce
- Onion - 1 pc.
- Garlic - 2 cloves
- Dried oregano - ½ tsp.
- Paprika - 1 tsp.
- Sun-dried tomatoes - 160 gr.
- Bulgarian pepper - 1 pc.
- Tomato paste - 1 tbsp. l.
- White wine - 90 ml.
- Chicken broth - 240 ml.
- A pinch of salt and pepper
- Cream - 90 ml.
- Parmesan cheese - 50 gr.
- Spinach - 90 gr.
- Fresh parsley - 1 tbsp. l.
Instructions
Preheat the oven to 320 °F (160 °C). Trim the chicken breasts to remove all the fat.
Lightly beat an egg in a shallow bowl.

In a separate shallow bowl, whisk together the flour, salt, pepper, oregano, thyme, paprika, and garlic salt.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Dip the chicken breasts in the egg and then in the flour mixture.

Put the chicken in a pan and fry on both sides until golden.

Remove the chicken from the pan and place on a baking sheet in the oven for 10 minutes to finish cooking while you make the sauce.

Add oil to a pan and heat over medium heat. Add the onion and cook for 3–4 minutes until it begins to soften.

Add garlic, oregano, paprika, sun-dried tomatoes, red pepper and tomato purée. Cook for 2 minutes, stirring.

Then pour in the wine and let it boil for 2 minutes.

Now add the chicken broth, salt, and pepper. Bring to a boil, then cook for 5 minutes.

Add cream and mix thoroughly. Use only heavy (double) cream.

Add Parmesan cheese and spinach to the sauce, stir, and cook for a couple of minutes until the spinach wilts.

Remove the chicken from the oven. Check for doneness (insert a knife into the fattest piece of one of the chicken breasts - it should no longer be pink), place in the pan with the sauce and cook for another couple of minutes.

Serve sprinkled with fresh parsley. It tastes great with pasta, zucchini, rice or sautéed potatoes.

Notes
Is it possible to make a dish without gluten? So! Use gluten-free plain (all-purpose) flour to coat the chicken, and substitute gluten-free vegetable stock or chicken stock for the stock.
