Before starting cooking, a few tips.
👩🍳 You can prepare the cauliflower leaf and meat sauce in advance and refrigerate them. When ready to bake, mix the ricotta filling and assemble the lasagna. This will save you time.
👩🍳 If you don’t press the cauliflower after cooking it in the pan, the cauliflower leaf will be a bit fragile, and you may have to break it up into several smaller pieces. Despite this, the lasagna will not lose anything and will be delicious in the end.

Ingredients
For cauliflower noodles
- Cauliflower – 900 gr. (2 pounds (0.91 kg))
- Eggs – 2 pcs. large
- Mozzarella cheese – 120 gr. (1/2 cup)
- Parmesan cheese – 60 gr. (1/4 cup)
- Garlic powder – 1 tsp.
- Salt – 1 tsp.
- Black pepper – 1/2 tsp. freshly ground
- Italian seasoning – 1 tsp. (basil, marjoram, oregano, rosemary, thyme)
For meat sauce
- Minced beef – 450 gr.
- Sweet Italian sausage – 450 gr.
- Onion – 1/2 pc.
- Garlic – 3 cloves
- Tomatoes – 785 gr. (shredded, preserved in its juice)
- Spinach (frozen) – 120 gr.
- Italian seasoning – 1 tsp.
- Salt – 3/4 tsp, or to your taste
For the ricotta filling
- Mozzarella cheese – 540 gr.
- Ricotta cheese – 480 gr. (2 cups (0.47 l))
- Parmesan cheese – 60 gr. (1/4 cup)
- Italian seasoning – 1 tsp.
- Salt – 3/4 tsp.
- Black pepper – 1 tsp. freshly ground
- Egg – 1 pc. big
- Cream (fat) – 120 gr. (1/2 cup)
- Fresh parsley – chopped, as desired, for garnish
Instructions
Preheat the oven to 190 C. Grind the cauliflower in a food processor or with a cheese grater until you get fine crumbs.
Sauté the cauliflower in a large skillet over medium-high heat for about 3–5 minutes, or until the cauliflower is tender and some moisture has evaporated.

In a bowl, mix fried cauliflower, eggs (2 pcs), grated mozzarella cheese (120 g), grated Parmesan (60 g), garlic powder, salt, black pepper and Italian seasoning. Mix thoroughly until a homogeneous mass is obtained.

Line a 45 x 33 cm baking tray with parchment paper. Spread the cauliflower mixture in an even layer on the baking sheet. It should be about 1/4 inch (0.6 cm) thick. Smooth with a spatula to get a flat sheet.

Bake the cauliflower florets in the preheated oven for about 15 minutes, or until golden brown and firm. Allow it to cool before use.

While the cauliflower is baking, prepare the sauce.
Fry the onion in a large pan until soft, add the minced beef and sausage.

Add the chopped tomatoes, spinach, Italian seasoning, and salt. Stir to combine ingredients. Reduce the heat to low and cook for 10 minutes. Taste and add more salt if needed.

While the sauce is simmering, prepare the ricotta mixture.
Mix 1/4 cup mozzarella (60g), ricotta cheese (480g), Parmesan cheese (60g), salt, pepper, and Italian seasoning in a bowl until well combined and smooth . Taste and add more salt and pepper if needed. Stir in the egg.

Cut a cauliflower leaf in half, so you have 2 leaves.

Place one sheet in the bottom of a 22.5 × 32.5 centimeter pan. Spread half of the ricotta mixture on top. Smooth the top with a spatula so that the layer is even.

Pour half of the meat sauce over the top, spreading evenly over the ricotta. Sprinkle with 1 cup (0.24 l) mozzarella cheese.

Repeat with another layer of cauliflower, a layer of ricotta and a layer of sauce. Top with remaining mozzarella cheese.

Add heavy cream on top. Cover and bake at 190 C for 45 minutes.

Uncover and cook for another 20 minutes, until the top of the cheese is browned and the edges are bubbly. Top with parsley, if using. Allow to cool slightly, then slice and serve!
