Potato latkes with sour cream are the taste of childhood. As a child, I always looked forward to picking potatoes. After all, this meant that my grandmother would cook my favorite latkes for me for several days in a row.

Then it took a little more time than now because the potatoes were rubbed exclusively on a grater. But now, the availability of kitchen appliances (food processor, blender) significantly reduces the cooking time. And the availability of potatoes that are good for the whole year in supermarkets makes it possible to cook potatoes whenever you want.
Ukrainian potato pancakes are considered a traditional dish of Belarusian cuisine, although potatoes did not come to Europe from Belarus. Now potato fritters (deruns, tertyuhs, potato fritters, terchynyki) are common in most kitchens of Eastern Europe.
However, this recipe is about how the Potato latkes were cooked in our village. In fact, potato pancakes are effortless to make. The most important thing is not to let the potatoes turn black. To achieve this, it is enough to simply mix freshly grated potatoes with chopped onions. Usually Potato latkes are chopped in one of two ways, sometimes they can be combined.
The method of making the dough for the potato pancakes
The first method
- Just grate the potatoes, but here it is important to grate the onion first, and only then proceed to the potatoes. Potatoes should be rubbed in small portions and immediately mixed with onions, thanks to which it will not turn black. Traditionally, potatoes are grated on a fine grater, but you can use a medium grater for these purposes. If you have a food processor, you can use it for convenience.
The second method
- Grind potatoes in a blender or chopper. This method is good because you can load potatoes and onions into the blender together, the onions and potatoes will mix, and the potatoes will not have time to turn black.
You can add a little sour cream or fresh milk to the dough for Potato latkes. As a result, they become very delicate and bright.
Potato pancakes can be served with sour cream and mushroom sauce, simply with mushroom sauce, or with pickled cucumber and onion salad. Maybe you like latkes with onions fried until golden, or crackers.

Ukrainian potato pancakes
A classic recipe for Ukrainian potato pancakes. Try to cook it – it's easy and fast, and most importantly, it's tasty.
- Potatoes – 0.5 kg.
- Onion – 1/2 pc.
- Flour – 1 tbsp. l.
- Eggs – 1 pc.
- Salt – 1/2 tsp.
- Oil – 30 ml.
For cooking, we will need products that are in every kitchen.
First, wash and peel potatoes and onions. Potatoes 500 gr. - this is a calculation for 2 servings. And rub them on a fine grater. If desired, you can use a blender. But the grater is more authentic.
Add the egg and salt.
Mix everything well.
Add flour and mix thoroughly to a homogeneous mass. You should achieve the same consistency as in the photo. No lumps.
We put the pan on the fire and heat it up. Add oil to a well-heated pan.
With a tablespoon, we spread our potato pancakes on the pan. Fry over medium heat for 2–3 minutes.
Turn over to the other side and fry until golden brown.
Ukrainian potato pancakes are ready!
Serve with sour cream or mushroom sauce. Potato pancakes with mushroom sauce are delicious! But that is an entirely different story.
You can add 1 clove of garlic to the recipe for a spicy taste!
