How to prepare Olivier salad?
You will find below the ingredients you will need for this recipe:
- Potatoes: Use red potatoes or golden potatoes, as they hold their shape well after cooking/baking.
- Carrot Eggs: Use home-grown eggs for better flavor.
- Sausage: This recipe usually uses regular cooked cured sausage. You can also use chicken or ham.
- Peas: Canned or frozen sweet peas are fine.
- Pickling: Use regular pickles.
- Mayonnaise: For salad dressing. Avoid using low-fat mayonnaise!
- Dill: Fresh dill adds the most authentic flavor!

👩🍳 PRO TIP: If you are serving the Olivier salad right away, combine all the ingredients in a large bowl, add the dressing and enjoy! If you want to make this salad ahead of time, I recommend keeping some ingredients separately. Place the potatoes, carrots, eggs, and sausage/ham in one bowl – without adding the dressing. In a second bowl, add the pickled cucumbers, onion, and dill. You should keep both bowls covered, and refrigerated, until you are ready to assemble the salad.
👩🍳 PRO TIP: try making a 50/50 sour cream dressing with mayonnaise. For a children’s version of Olivier salad, dress it exclusively with sour cream.
👩🍳 PRO TIP: the best salad comes out when all the ingredients are cut into cubes of the same size. That way, you can enjoy all the flavors together! I recommend pea-sized cubes for the best appearance, flavor, and texture.

Discover the secrets to creating the ultimate Olivier salad! The Olivier recipe is known to almost every housewife in Ukraine because it comes from the Soviet Union. And this recipe is good for those who don't know how to make Olivier or what is needed to make Olivier.
- Potatoes – 4 pcs.
- Carrot – 5 pcs.
- Eggs - 6 – 7 pcs.
- Pickled cucumbers – 10 pcs.
- Green onions – 3 pcs.
- Fresh dill – a small bunch
- Smoked ham or sausage – 350 gr.
- Green peas – 1 cup (0.24 l)
- Mayonnaise – for dressing
- Sour cream – 1/2 cup
- Salt – to taste
- Onion – 1 pc.
Place the carrots and potatoes in a large pot of salted water. Bring the water to a boil and cook the vegetables until they are soft. Carrots will take about 15 minutes, potatoes can take up to 25 minutes. Carefully remove the vegetables from the hot water with tongs and place on a tray to cool before peeling. When the carrots and potatoes cool down, carefully peel them.
Bring a separate small pot of salted water to a boil, then carefully drop in the eggs. Cook the eggs for 9 to 10 minutes, until they are hard-boiled. Yolks should be firm. Remove the eggs from the heat, drain the boiling water and run cold ice water over the eggs to cool them down quickly. After cooling, peel the eggs.
All the filling should be cut into small pieces: potatoes, carrots, sausage, and eggs. We send them to a large bowl.
The next step is to cut the pickles into pieces and add them to the rest of the ingredients.
And finally, sausage, green peas, and onions.
Having them the same size is indispensable for taste, consistency, and appearance. It is not necessary to cut the salad finely, you can also cut it into larger pieces, the size of a hazelnut. If you do not plan to eat the full prepared salad at once, then after this step, add salt and pepper to your taste and thoroughly mix all the ingredients.
Before serving, add green onions, fresh dill, and mayonnaise. Mix well. As required, add salt and pepper as needed.
Before serving, dress a portion of the salad with mayonnaise. Store the rest of the mixture separately without dressing, and the salad will last longer, be fresher, and taste better.

You can prepare salad dressing by mixing sour cream and mayonnaise in a 50/50 ratio. Moreover, for a children's version, I recommend dressing the salad exclusively with sour cream.
You can replace the sausage with ham or chicken breast.
If you prepare the salad in advance, for a holiday or dinner, do not add dressing, pickles, dill, and green onions to it, but cut them and add them before serving.
