They are traditionally made from a simple dough filled with sweet farm cheese or meat. This version, which uses a mixture of cottage cheese, ricotta cheese and mascarpone. Pancakes or cheese pancakes are delicious warm and are great for breakfast, or they can be enjoyed as an afternoon dessert!
Thin pancakes from scratch
Nalysniki are the VERY sweet cheese pancakes that everyone in Ukraine loves! They are easy to make and can be found in most cafés and restaurants. Pancakes are made by filling a simple dough with sweet farm cheese. Pancakes are rolled in the form of an envelope, or rolled in the form of an egg roll.
Some options are prepared with the addition of raisins or cranberries in the filling. Try serving yours with fresh berries, sour cream or whipped cream. How to make pancakes with milk and eggs
These delicious pancakes with cheese filling start with a simple pancake recipe! I find the easiest way to make pancakes is to put all the ingredients in a blender and whiz for a few minutes until you have a smooth batter. You can also make the dough manually.

- First, beat the eggs, milk, sugar, and butter for a few minutes. Then start adding the flour gradually, beating well after each addition. Preparing the dough manually is easier if all the ingredients are at room temperature.
- To make the pancakes, heat an 8-inch griddle or pancake pan and use 1/4 cup pancake batter for each pancake.
- Simultaneously pour and tilt the pan to form thin and even pancakes. Cook the pancakes for about 1 minute on the first side, then flip and cook another 30 seconds on the second side.
These pancakes with cheese filling are easy to assemble!
- First, prepare the cheese filling. Simply combine the cheeses with the egg, sugar and optional vanilla in a large bowl. Mix everything together until a homogeneous mixture is formed.
- Spoon a few tablespoons of the filling into the center of each pancake, then roll the pancake into an egg roll shape. You can also try to distribute the filling evenly around the edges and roll the flatbread into a log.
- Place the formed pancakes on a baking sheet and cover the top with a few pieces of butter.
- Cover and bake for about 30 minutes, until the cheese is melted.
- Enjoy them with fresh berries, sour cream, whipped cream or even preserves.

Pancakes with milk

Find out how to make the best Ukrainian pancakes with a cheese filling! They are delicious served with berries and sour cream. It will be unbeatable!
Ingredients
For windsurfers
- Milk – 2 glasses
- Eggs – 5 pcs.
- Butter – 1/4 cup (60 gr.)
- Flour – 1.25 cups (300 gr.)
- Sugar – 2 tbsp. l.
For filling
- Curd mass – 450 gr.
- Ricotta cheese – 450 gr.
- Mascarpone cheese – 225 gr.
- Egg yolk – 1 pc.
- Sugar – 3 tbsp. l.
- Vanilla – 1 tsp, as desired
- Raisins – 1/3 cup or dried cranberries, if desired
- Butter – 1/4 cup (60 gr.), cut into cubes fruit for serving
Instructions
It is important that all pancake ingredients are at room temperature before mixing to avoid lumps in the batter. Beat the eggs, butter, sugar, and milk in a large bowl for a few minutes until smooth. Gradually add the flour, beating well after each addition. Beat until there are no lumps!
Preheat an 8-inch nonstick skillet over medium heat. Add about 60 grams of batter to the pan at a time, tilting it so that the batter covers the entire surface of the pan. Cook the pancakes on the first side for 1 minute, then flip the flatbread when the pancake starts to turn golden brown. Cook on the other side for 30 seconds, then remove and place on a plate.
Preheat the oven to 175 °C (350 °F).
Next, we prepare the filling. Place the cheese, egg, sugar and optional vanilla in a large bowl. Use a large spoon to mix everything together until smooth. If desired, add 1/3 cup raisins or dried cranberries to the filling.
For each pancake: Place a generous amount of filling (about 2 tablespoons) in the center of each pancake. Fold each pancake like an egg roll: fold the sides first, then fold the top. Or distribute the filling evenly around the edges and roll the pancakes into a log. Place the puff pastry, seam side down, in a large glass baking dish or casserole dish.
Add cubed butter on top of the pancakes and cover the pan with foil. Bake cheese pancakes for 30 minutes; bake the first 20 minutes covered with foil and the last 10 minutes without foil.
Allow the cheesecake to cool slightly before serving with fruit and/or whipped cream.

If now is not the season for berries, serve pancakes simply with sour cream, it will be delicious!
