The beauty of this dish is that it does not take much time to prepare, it is quite filling and at the same time helps to cool down on a hot summer day! On the network you will find a lot of okroshka recipes, they are mainly distinguished only by the types of meat; it can be boiled sausage, sausages, sausages or, as in this case, boiled meat. Yes, there is also a possible method of cutting products and actually options for broth.
This recipe uses boiled meat, but you can also replace it with boiled sausage to your taste. The same goes for broth; in the recipe it is kvass, but you can feel free to use kefir instead or both in a 50/50 ratio. In general, do not be afraid to experiment. Okroshka on kvass is not afraid of this.

Cold soups for summer
Light summer cold soup - okroshka on kvass. If desired, you can add sour cream or kefir.
Ingredients
- Kvass - 1.5 l., or kefir
- Boiled meat – 250 g
- Fresh cucumbers – 2 pcs.
- Radish – 1 bunch
- Potatoes – 2 pcs.
- Eggs – 3 pcs.
- Green onion – 150 gr.
- Dill, sour cream, mustard, salt, pepper, sugar – to taste
- Kefir or sour cream – for serving
Instructions
The first step is to boil eggs and potatoes. Boil the eggs for at least 8–10 minutes. After the ingredients are ready, turn off the heat and let them cool down.

Cut the meat, cucumbers, and potatoes into cubes. And thinly sliced radishes.

Finely chop the dill and green onion and rub with salt. Chop the eggs.
Add to the rest of the ingredients and mix thoroughly.

Add spices to your taste to the okroshki base.
Before serving, spread on plates, add greens and pour kvass.

You can also add sour cream or kefir to okroshka - to your taste!

Notes
If you wish, you can replace the boiled meat with boiled sausage or ham.
Add kvass (kefir, sour cream) immediately before serving. Kvass is a drink common in the post-Soviet space, and almost not represented outside of it. Therefore, replace it in this recipe with kefir.
