It is especially popular in the cold season, as it has a powerful warming property. By the way, some people think that kharcho soup with rice should be cooked not at all from beef, but from lamb. Indeed, there was such an option, although it is nothing more than an echo of the Soviet era. Why? But because lamb food was once cooked in the Kremlin kitchen. To please one member of the government who could not stand beef.
By the way, recipes for kharcho soup are as diverse in Georgia as there are recipes for borscht in Ukraine.
The national spicy soup of Georgian cuisine is prepared only from beef. Another characteristic feature of the soup is tklapi, without it, it is just a meat soup, not kharcho. The third feature is the addition of kharcho – walnuts (chopped) – half a glass for two liters of broth. These three components are mandatory, not subject to any substitution, otherwise kharcho, as a national dish, loses its inherent taste.

It will take you two and a half hours to prepare kharcho soup. Before the final serving, let the soup cool down a little and infuse under the covered lid, then squeeze out the garlic and wait another 5 minutes. Before serving the kharcho, finely chop the remaining third of the greens and add to each plate. Bread from a home oven or pita bread is very suitable.

Kharcho is a delicious dish of Georgian cuisine, and the most common mistake of Ukrainians is to call this dish “soup”. Kharcho is kharcho, you never say that today I will prepare “borscht soup”.
- Beef on the bone – 1 kg.
- Water – 2.5 l.
- Rice – 120 gr.
- Tomato paste – 2 tbsp. l.
- Onions of medium size – 4 pcs.
- Sunflower oil – 2 tbsp. l.
- Flour – 1 tbsp. l.
- Parsley root – 1 pc.
- Bay leaf – 1 pc.
- Walnut – 50 gr.
- Suneli hops – 1 tsp.
- Pomegranate juice without sugar – 125 ml
- Cilantro, basil – 1 bunch
- Hot pepper – 1 pc.
- Garlic – 5 cloves
- Salt, ground black pepper – to your taste
Prepare broth for kharcho. To achieve this, wash the beef and cut it into 4–5 pieces. Place in a large saucepan, cover with water and cook for 1.5 hours, periodically removing the foam.
Strain the broth through a fine sieve. Separate the beef pulp from the bone, cut it and put it in a small container. Pour a ladle of broth and close.
Pour the kharcho broth into a saucepan and bring to a boil. Wash the rice thoroughly. Pour into the boiling broth and add salt. Put the chopped beef in the broth with rice and cook over low heat for 10 minutes. Add tomato paste and mix.
Peel the onion, finely chop it and lightly brown it in oil. Sprinkle with flour and stir-fry over medium heat for 5 minutes. Remove from the stove.
Clean the parsley root for kharcho, rinse with cold water and grate on a large grater. Add to the broth along with fried onions and bay leaves. Pepper.
Grind the walnuts in a blender and pour into the soup. But for authenticity, try the old method sometime and grind the nuts in a mortar. Cook for 5 minutes. Add suneli hops and pomegranate juice to the food. Cook on low heat for 5 minutes. Add salt to taste.
Wash the cilantro and basil for kharcho, dry and tear off the leaves from the branches. Chop them up. Wash the hot pepper and cut into thin rings. Peel the garlic and pass it through a press. Combine with cilantro, basil, and pepper.
Remove the pan from the heat. Add the mixture of garlic, greens and hot pepper. Close the pot and wrap it with a large towel. Leave for 10 minutes, then pour on plates.
Of course, please keep in mind the deliciously fragrant Georgian pita bread!
The statement that kharcho is prepared only with mutton is a myth, but if you feel like it, you can replace the beef with mutton. It's entirely up to you!
