For as long as I can remember, I have always loved fried pancakes – pancakes with apples, zucchini, or pumpkin. The simplest version of fritters is a simple liquid dough, fried in small portions in vegetable oil. The dough is prepared without any fillers, but ready-made pancakes are abundantly poured with sour cream, jam, honey, condensed milk.

Unlike pancakes or flat breads, fritters are small and thick. Baking powder, baking soda, or even yeast are often added to the dough to make the pancakes. Pancakes made from vegetable pulp – for example, pancakes with apples, pancakes or zucchini fritters, by themselves, do not turn out very thin.
As a rule, fritters are prepared with filling or fillers. For this, grated or grated fruit pulp, berries, raisins, etc. are added to the liquid dough. By and large, thin pancakes are usually served with a filling wrapped in them. Chicken pancakes are a hit at our house, nothing more than thin pancakes with a delicious filling of chicken and fried onions wrapped in them.
When preparing apple pancakes, it is typically meant that chopped apples are added to the dough. Any pancakes or pancakes with apples are most often prepared with apple filling and stuffed after baking.
Catching the line between pancakes, pancakes and fritters is often quite difficult. Many agree that with a similar cooking recipe, all these dishes differ more in shape and size than in composition and manufacturing technology.

Pancakes with apples
Pancakes with apples are a tasty and unpretentious dish that can be served as a dessert or as a light breakfast.
- Ripe apples - 2 – 3 pcs.
- Egg – 1 pc.
- Milk – 100 ml.
- Wheat flour - 1 – 1.5 cups
- Sugar 2 – 3 tbsp. l.
- Vanilla, cinnamon, baking powder, salt – to taste
- Honey, mint, apple – for serving
Any fritters, whether Ukrainian fritters with apples or American pancakes, are made from liquid dough. As a rule, this is a simple dough – flour, egg, milk, and sugar. The entire preparation is reduced to mixing the ingredients and frying small portions of the dough in heated oil or in a dry pan. Pancakes turn out to be delicious if you add chopped fruit or berry pulp to the liquid dough.
Beat two eggs in a deep bowl and add half a glass of cold milk. Add vanilla, cinnamon and 2-3 tbsp. l of sugar. It should be said that pancakes can be sweet within expansive limits. Sugar can be added to the liquid dough already after mixing it, you just need to wait a little until the sugar dissolves.
Mix the egg, milk, vanilla, cinnamon, and sugar with a mixer or in any other way. The liquid base of the dough should be just homogeneous, not creamy or “whipped”. It is also worth waiting a few minutes for the sugar to dissolve.
It is difficult to accurately determine the amount of flour, since a significant part of the liquid in the dough will be given by juicy apples. Roughly, you will need up to 1.5 cups (0.35 l) of flour, which is about 250 grams by weight. Flour must be sifted. Mix sifted flour with baking powder – the amount of baking powder is indicated on the package. I bought a bag of baking powder designed for 0.5 kg of flour, so I required 0.5 bag. Add a quarter of a teaspoon of salt to the flour.
Add 1 cup (0.24 l) of flour mixture with additives to the liquid mixture and mix thoroughly. Flour should then be added in small portions and continue mixing. As a result, it is necessary to achieve the thickness of the dough, like very thick, but still liquid honey.
When starting to cook, in advance, you need to prepare several beautiful and sweet apples. Peel the apples from the skin and seeds immediately before adding to the dough. Peeled apples darken quickly from oxygen, so there is no need to prepare them in advance.
Grate the peeled apples on a large grater or finely chop them with a knife – preferably a ceramic one. If the apples are too juicy, you can squeeze out the juice a little with your hands. Add the grated apples to the liquid dough. A small caution – the number of apples may be more than indicated in the recipe. The more apples, the tastier and juicier the pancakes.
Carefully mix the liquid dough with apples and, if necessary, add a little flour so that the pancake dough is quite liquid, similar to low-fat sour cream. The dough should run off the spoon.
Pour vegetable oil into the pan and heat it. If the oil has a smell, you need to warm it up a little. When heated, the smell disappears. In general, it is better to use refined or purified oil. Scoop up the liquid dough with an ordinary tablespoon and put a portion in a heated pan. One spoon is one serving. In terms of size, perfect and round pancakes will turn out.
Reduce the heat under the pan to “below average” and fry without covering the pan with a lid. Pancakes are approximately fried for 4–5 minutes on each side.
As soon as the lower part of the pancakes are browned, turn them over with a fork. By the way, many people are convinced that it is not necessary to turn over with a fork, but with spatulas, tongs, special devices, etc. I tried it, it's inconvenient, and the oil splashes in all directions. A fork is much more convenient and, most importantly, safer.
Turn the pancakes over and fry until done. Frying time is absolutely enough for the dough to bake well. Put the finished fritters on a plate and let them cool for a few minutes. Hot – can easily burn the tongue.
Put the pancakes on a plate. Drizzle the apple pancakes with honey, preferably light – acacia or linden. If the honey has become sugary, you can dilute it with 1 teaspoon of boiled water, this is permissible. Garnish with a sprig of fresh mint and slices of thinly sliced apple.
If desired, you can sprinkle with powdered sugar, pour cherry jam or decorate with any fresh fruit. Pancakes should be served hot.
If desired, you can use other fruits instead of apples. You can add finely chopped mint to the liquid dough – this option is very suitable if you use the kiwi. In addition, any fritters are delicious with sour cream and, in general, the highest class, with condensed milk.
