What are apple fritters? Apple fritters are essentially apple donuts; apples dipped in simple batter and fried in oil. If you like, you can cut the apples into small pieces and place mounds of apple fritter dough in the oil to make apple fritters. They’re best fried as apple fritter rings because they look like donuts – extra cute, easier to eat, and less likely to fall apart in the oil.
👩🍳 PRO TIP: When frying, the temperature of the oil should be above 175˚C (347˚F) so that the fritters do not absorb too much oil. An ordinary culinary thermometer helps to control the temperature, and if you often cook deep-fried dishes (using an ordinary pan), then this thing is indispensable.
The ingredients for this recipe are usually found in every kitchen, they are:
- Apples – Choose crisp, sweet-tart apples.
- Lemon juice – squeeze over the apples, so they don’t darken.
- Flour – whatever flour you use.
- Sugar – slightly sweetens the dough.
- Baking powder – helps the dough rise.
- Salt – balances out the sweetness of the dumplings. Milk of any fat; from 1% to whole milk.
- Butter – Creates a tender dough.
- Egg – Use 1 egg yolk and then add 2 beaten egg whites to make the batter fluffy.

Apple donuts

Apple fritters are basically fried donuts filled with apples. These apple rings in the dough can be called by different names: donuts with apples, donuts – but one thing will not change, it is delicious.
Ingredients
- Flour – 125 gr.
- Sugar – 2 tbsp. l.
- Baking powder – 1.5 tsp.
- Salt – 0.25 tsp.
- Milk – 160 ml.
- Egg yolk – 1 pc.
- Butter – 1 tbsp. l.
- Egg white – 2 pcs.
- Apples – 4 pcs. (medium)
- Lemon juice – 3 tbsp. l., or the juice of 1 medium lemon
- Vegetable oil – for frying
Instructions
In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt. Mix them thoroughly.
In a second large bowl, whisk together the milk, egg yolk, and melted butter.
Gradually add the flour mixture to the milk mixture and beat until smooth.
Pour oil into a large saucepan (about 5-7 cm) and heat over medium heat to 190 ˚ C (374 ˚ F). It is advisable to use a cooking thermometer.
Peel the apples from the core and cut them into rings 7-8 mm thick, and put in a shallow dish. Squeeze the lemon juice over the apple slices and gently toss the apple rings with your hands to coat with the lemon juice (this will prevent the apples from browning).
In a medium bowl, beat 2 egg whites with an electric hand mixer until a firm foam is formed, but the whites are not dry. If you beat them too long, they will become too dry and difficult to mix. Use a spatula to gently fold the egg whites into the batter until smooth.
Dip both sides of the apple into the batter to coat completely. Allow the excess batter to drain back into the bowl.
Fry in hot oil in single layer portions (5 or 6 at a time to avoid crowding).
Cook for about 2 minutes on each side or until browned, turning once. Keep the oil above 175 ˚C (350 °F) when frying.
Remove with a strainer and transfer fritters to a paper towel-lined plate to absorb excess oil.
To serve, dust with powdered sugar or dip both sides in cinnamon sugar.*
