Yes, it’s the sauce, not the pasta or the spaghetti. In Ukraine, this dish is often associated with pasta filled with meat filling, and this is a big mistake.

It is traditionally prepared by the people of Bologna with fresh tagliatelle (ital. tagliatelle alla bolognese) and green lasagna. Less traditionally, the sauce is served with other pasta.

The thick, aromatic, incredibly tasty and hearty Bolognese sauce is a classic of Italian cuisine. It should combine two types of meat: beef and pork, although now Italians often use only beef. Contain fragrant greens, tomatoes, as well as dry red wine. Don’t be afraid to add wine to this dish, even if it will cost the kids. During cooking, the alcohol completely evaporates, leaving only an aromatic bouquet.

Bolognese sauce ingredients

  • Mixed minced meat – beef and pork, it is better to make homemade minced meat;
  • Onions, celery stalks, carrots;
  • Tomatoes and/or tomato paste;
  • Cinnamon, coriander, marjoram, basil, parsley, bay leaf;
  • Olive oil;
  • Butter;
  • Sugar, salt, pepper;
  • Parmesan;
  • Milk or cream – every so often.

Of course, it is not necessary to mix all the listed ingredients. Depending on the recipe, some or other ingredients are included in it, as in Ukrainian borscht. The combination of which makes the sauce tender so that it literally melts in the mouth.

How to prepare Bolognese sauce:

Start by chopping the vegetables in a food processor. Finely chop the vegetables (onions, carrots, celery stalks) in such a way that they will literally dissolve in the sauce later (and your children will not notice that you put useful things in this dish).

Heat a pan over medium heat, add olive oil and butter. Add chopped onions, carrots, celery stalks and simmer for 10 minutes until the vegetables soften.

Next, add the mixed minced meat and cook until the pink color of the meat disappears. Add the tomato paste and stir, and after a couple of minutes adds the wine. Then simmer the sauce for another 15 minutes.

Then add the canned tomatoes along with the sugar, salt, and pepper. It may look like many tomatoes, but since you will be cooking this bolognese sauce for about 2 hours, some liquid will evaporate during that time and the sauce will thicken considerably. Plus, a generous number of tomatoes will cook down to make a delicious tomato sauce.

Many bolognese sauce recipes call for dried herbs, but fresh herbs are better. Simply place the large sprigs – stems and leaves – directly into the sauce for maximum flavor. After 2 hours, pull out the stems, although most of the oregano leaves will have disappeared and this is completely normal.

Give the Bolognese sauce a good stir sometimes as it cooks to make sure nothing sticks to the sides. If the sauce is too thick, you should also add a little boiling water (or broth) to thin the sauce to your liking.

How to serve spaghetti

Bolognese We recommend the cooked pasta, add it to the sauce and boil it for a few minutes before serving, thus allowing the pasta to absorb some flavor of the sauce.

This means that you will have to carefully estimate how much pasta and how much sauce you will need, as leftover pasta cooked with sauce will become thick and sticky when reheated.

For extra piquancy, we recommend adding grated fresh Parmesan just before serving, as well as a good sprinkling of fresh herbs to liven up the dish.

How much to cook? Bolognese sauce usually needs at least 2 hours of slow simmering to develop the flavor and tenderize the meat. You can, of course, cook it in less time, but the flavors will not be as rich. This is why bolognese sauces taste so much better the next day!

How long does the sauce last in the refrigerator? Bolognese can be stored in a closed container in the refrigerator for up to 3–4 days.

How much is stored in the freezer? Bolognese sauce can be stored in airtight containers or freezer bags in the freezer for up to 3 months.

How much bolognese sauce per person? This of course varies from person to person! But about 1 cup (0.24 l) per adult.

How to thicken Bolognese sauce? Bolognese sauce thickens as it cooks, and the longer it cooks, the thicker the sauce will become. You should cook the bolognese sauce by letting it simmer over low to medium heat, but if you’re rushing and trying to make a “quick” bolognese sauce, you can thicken the sauce by cooking it on a higher heat.

What if my bolognese sauce is too sweet? Canned tomatoes differ in sweetness, so you should taste the sauce before adding sugar. But if your bolognese sauce is too sweet, try balancing it out with a splash of red wine vinegar.

What pasta to serve with Bolognese sauce? The choice is endless! You can’t go wrong with spaghetti or fettuccine, but short and ribbed pasta also goes well with meat bolognese sauce.

Ingredients for the sauce

  • Carrot – 1 pc. (large)
  • Celery - 1 – 2 sticks
  • Onion – 1 pc.
  • Garlic – 2 cloves
  • Extra virgin Olive oil – 50 gr.
  • Butter – 1 tbsp. l.
  • Fresh minced meat – 400 g (mixed beef/pork)
  • Tomato paste – 4 tbsp. l.
  • Canned tomatoes – 1.6 kg.
  • Oregano or marjoram 4–5 sprigs, basil – 2 sprigs, bay leaf – 2 pcs.
  • Dry red wine – 100 gr.
  • Salt and pepper – to taste, sugar – 0.5 tsp, or to taste (optional)

For submission

  • Spaghetti – boiled according to the instructions on the package
  • Fresh greens – finely chopped
  • Parmesan cheese – finely grated

Instructions

    In order for our dish to be fragrant and thick, there is no need to rush. This is how bolognese pasta is prepared for a long time so that the ingredients combine and dissolve in each other. To begin with, you should prepare and purchase all the necessary components. So, finely chop the onion and celery with a knife, and grate the carrot on a fine grater.

    Heat a pan over medium heat, add olive oil and a spoonful of butter.

    Add onions and fry for 2–3 minutes, then add carrots and celery. Let the vegetables cook for 7–8 minutes, stirring constantly, or until the vegetables soften.

    Let's increase the fire to high, and add our minced meat.

    After the meat is browned, reduce the heat to very slow (our sauce should barely boil) and add the tomato paste and cook for a few more minutes.

    Add dry red wine and continue cooking for another 10–15 minutes.

    Add canned tomatoes, greens, and sugar. Sugar will add light sweet-sour notes to our dish. Greens can be added whole sprigs and let them cook in the sauce. And at the end of cooking, remove the stems.

    Season with salt and pepper. Cook over low heat for another 2 hours, the longer the sauce simmers, the better – but remember it should barely boil. If the liquid boils, you can add broth or boiling water (in small portions).

    10–15 minutes before the sauce is ready, cook the pasta according to the instructions on the package. Wash and chop fresh greens, grate Parmesan.

    To serve, mix the boiled spaghetti with the sauce and cook for another 1–2 minutes. Arrange on plates and season with greens and Parmesan.
