The beef is super juicy thanks to the grated onion, and the cheese adds a super savory flavor when the flatbread is heated up! They are seasoned with dill, a traditional Eastern European and Ukrainian seasoning that is used to season almost everything in our kitchen.

Easy meat recipes

This recipe features savory crêpes stuffed with cheese and ground beef, then served with sour cream.
Ingredients
For Crêpes:
- 4 large eggs
- 2 cups (0.47 liters) milk
- 1/2 tsp salt
- 1/4 cup butter, melted
- 2 1/4 cups all-purpose flour
For Filling:
- 1 pound (0.45 kg) ground beef, 85% lean
- 1 medium onion, grated
- 1 tbsp fresh dill
- Salt and pepper
- 1/2 tsp garlic powder
- 1 cup (0.24 l) mozzarella cheese
- Additional 2 tbsp butter, for frying
- Sour cream, for serving
Instructions
First, prepare the pancakes. Put all the ingredients in a blender: eggs, milk, butter, salt, and flour.
Mix for 2–3 minutes until the dough is smooth and lump-free. Start with 280 grams (2 1/4 cups) of flour, add more if the dough is too thin.
Heat a pancake pan over medium heat and use 1/4 cup (60 g) batter for each pancake. Pour the batter into the center of the pan, then tilt to spread it evenly around the edges.
Cook for 1–2 minutes on the first side until golden, then flip with a rubber spatula and cook on the other side for 30 seconds.
Stack the crêpes onto a tray.
Prepare the meat filling. Heat a large skillet over medium heat and add a drizzle of olive oil. Add the ground beef and season with about 1.5 teaspoons of salt, a little ground black pepper, and garlic powder. Fry the ground beef for 5–7 minutes until well browned, breaking up large pieces.
Add the grated onion and fry for 2 to 3 more minutes, until the onion is tender and fragrant.
In a large bowl, combine the meat mixture with grated mozzarella cheese and fresh dill.
To assemble the pancakes, place a few tablespoons of the filling in the middle of each pancake.
Fold the sides first, then roll the small pocket. Just like the cabbage rolls are wrapped!
Preheat a clean skillet over low to medium heat and add about 1/2 tablespoon of butter per batch. Fry the pancakes 3–4 pieces at a time, 2–3 minutes on each side (so that the filling warms up well), until golden.
Serve warm with sour cream on the side.

Notes
You can replace the ground beef with chicken!
